Handmade Watermelon Pram.. Perfect for a baby shower

Was uploading some photos and found some of these from a few weeks back.  Thought would be fun to put some photos up =)

Baby in a pram, a.k.a. Fruit bowl!  It is actually a lot easier than it looks.  I actually didn't believe it will be quite this easy, but got some assurance from a friend who loaned me her knife and a coffee scooper for my craft.  Thanks!!  =)

Anyway, all you need are these items:

*  Longish watermelon (I had to made do with a rounded size)
*  1 Wooden skewer (for drawing on the watermelon)
*  Toothpicks (use them to prop the head and wheels and for the eyes)
*  A not too sharp knife (Trust me..  Don't get a blunt or too sharp... I had a deep nick with a not too sharp knife.. I'm a klutz like that!)
*  Melon scooper (to scoop those flesh into balls.  If you don't have a melon scooper, use a coffee scoop.. or just use a spoon and scoop out those darn flesh)
*  Spoon (to scoop all those flesh out)
*  Pacifier

Fruits such as:
*  Green and red grapes
*  Cherries
*  Strawberries
*  Physallis
*  Small honeydew/rockmelon (for the baby's head.  I couldn't find a rockmelon, had to made do with a honeydew)
*  Blueberries (at least 2 for the eyes)
*  An orange (4 slices - Make sure they are slightly thick)
*  Basically any fruits which are in season!

First find your watermelon and cut the bottom off (so, it could stand firmly by itself)
Next step was drawing on it with a skewer..  I decided to put a heart on the handle, I'm a romantic like that ;)

Then, off you go with the knife.  It's a lot easier to poke and then cut with the knife as the mark left by the wooden skewer is quite visible
Looks like a blood bath, aye? =)
But hey!  Do you like the scallops around the pram?  It's quite sturdy as well, cos the bottom is evened out
Back view..  That's the handle area
The final product.  Skinned the little honeydew head.  Used toothpicks so the blueberries could stick as the eyes.  Cut a little hole for the mouth so you could poke the pacifier in.  Scatter some fruits (watermelon and honeydew/rockmelon) inside the pram.  Then, prop the head onto the fruits in the pram.  With the head, just use a couple of skewers at the back into the watermelon husk so, it could sit up slightly
Have a friend help you scatter all the fruits around the pram.
We added the orange wheels with a toothpick so they could stand upright
Looks like a baby in pram surrounded by flowers..

Had quite a fun time making it!  Have a lovely week!

Salted Caramel Chocolate Truffle Recipe. So deliciously creamy and smooth!

Can you believe it's already December??  Christmas is fast approaching.  December is a fun month, filled with baked goods, presents and laughter.  Since moving to Sweden, December evokes memories of warm glögg, hot spiced chocolate and loads of food!

Anyway, in getting into the spirit of Christmas, I have been busy in the kitchen last week.  I made my first batch of gingerbread men cookies which turned out great and salted caramel chocolate truffles which if I was mighty pleased with..  They turned out so damn creamy and gave me the big "O"!  *faints with pleasure*  If you love dark chocolate, this is definitely something you'll enjoy.  If you hate dark chocolate.. Well.. skip along then!

Anyhow here it is!  Recipe actually call for 300g of chocolate, but unfortunately, I could only find blocks of 200g cooking chocolate, but I think the truffles tasted rich but soooo deliciously smooth!

Ready to eat salted caramel chocolate truffles
Chopping up my blocks of chocolate
400g of finely chopped dark chocolate sitting in a bowl.. yum yum
Sugar slowly dissolving on medium heat.  Keep dragging sugar with a silicon spatula, from edges to middle to dissolve evenly
Once sugar is fully dissolved, it should have this delicious dark golden brown colour
Pour in half the cream (slowly), vanilla extract and light brown sugar.  It'll boil furiously, so be careful
Boil boil boil!!  Once boiling has subsided, add the remaining cream
Smelling heavenly!  Once caramel is smooth looking, add butter and sea salt.  Stir gently to combine
Pour hot caramel over chocolate
See the green box in the background? That's the falksalt I use =)
Man!  The combination sure smells good!!
Stir gently to combine.  Looks smooth and creamy!
Then, chill in the fridge until it's firm enough to form into balls.  I had to leave mine in the fridge for at least 2 hours

Ganache mixture rolled in cocoa powder and put back into the fridge to chill!  I added a few flakes of salt onto each truffle for the extra salty kick
Add with my homemade gingerbread men cookies, these make perfect Christmas gifts =D
I managed to make 40 of these little beauties!
Christmas Gifts! =D

Ingredients:

*  300 - 400g of dark chocolate (make sure it's at least 70% cocoa solid), finely chopped
*  1 1/2 cups of caster sugar (I didn't have caster, but used granulated sugar instead)
*  300ml of double cream (vispgrädde) - 3DL
*  1/2 tsp of vanilla extract
*  20g light soft brown sugar (less than 2 heaping TSP)
*  20g of unsalted butter
*  1/2 - 1 tsp flaked sea salt
*  cocoa powder for dusting

Make 40 delicious and creamy salted caramel truffle balls

METHOD:

1.  Chop chocolate finely and put them into a medium sized heatproof bowl and set aside.

2.  Pour sugar into a medium sized saucepan on medium heat and let sugar dissolve and caramelise around the edges.  Using a silicon spatula, drag the dissolved sugar towards the middle.  This will help it dissolve evenly.

3.  Once sugar is fully dissolved and turned a dark golden brown, pour half the cream in (slowly), vanilla essence and light brown sugar.  It will boil up furiously, so, pour your cream in slowly.  Once bubbling has subsided, add the remaining of cream*.  Once mixture is smooth, add butter and sea salt.  Stir gently to combine.

4.  Pour hot caramel over chocolate and stir gently to combine**.  Chill in the fridge until firm enough to form into balls.  Mine took at least 2 hours

5.  To make the truffles, have a small bowl of cocoa powder ready and a baking tray lined with baking paper.  Take a large teaspoonful *** of the ganache mixture and roll mixture in the cocoa powder and set on the baking tray.  Chill truffles in fridge until needed

*  If caramel is lumpy, put over low heat and allow to melt
**  If the ganache splits when you add the caramel, use a hand blender to bring it back together
***  I used two teaspoons to scoop the ganache and form into balls (as mixture was still slightly wet and it was 4am and I needed to sleep!)

Cornbread Recipe, courtesy of my lovely friend, Shelah!

I know next to nothing of Thanksgiving except it's HUGE with the Americans and when I was attending a Thanksgiving dinner, I had to bring some sort of dish.  *Major panic mode*  I actually thought I'll make a Mac & Cheese dish..  What?  Not very thanksgiving food?  *Even more major panic mode*  Thankfully Shelah came to the rescue and provided me with her cornbread recipe.  Funny thing is, she's not an American but a Filipino, and I thank my lucky star for her as both bread were quite moist and tasty.

My first loaf was made at a friend's place and I accidentally bought polenta instead of cornmeal Whoops!  It was slightly grainy but was still quite tasty! hehe.  The mixture turned out quite watery but once baked it looks fine.   But if you want it thicker instead of 1 1/2 cups of buttermilk, you could just use 1 cup of buttermilk

Mix, Mix, Mix..  Hmm.. so watery!
Chopped corn kernels!
1st loaf baking in the oven
My loaf pan is too long, hence my bread is really low in height!
Time for me to get a shorter loaf pan =P
Looks pretty nice and golden colour!
2 different shaped cornbreads

This one is higher..  Check out the corn pieces =)

Cornbread Recipe

Ingredients:

* 1 cup cornmeal (majsmjöl)
*  50g of melted butter
*  3/4 cup of all purpose flour
*  1 TSP sugar
*  1 1/2 tsp baking powder
*  1/2 tsp baking soda
*  1/4 tsp salt
*  2 large eggs (I used 3 average sized eggs)
*  1 1/2 cups of buttermilk
*  1 small can of corn kernels

1.  Set oven to 220 degrees Celsius.
2.  Mix Cornmeal, flour, sugar, baking powder, soda and salt together in a bowl.
3.  In a separate bowl, beat the eggs and then add the buttermilk and melted butter.
4.  Pour in the cornmeal mix and fold until smooth.  (I had to stir as my mixture was really runny)
5.  Bake for around 20 - 25 minutes until golden brown (Insert a toothpick and if it comes out dry, your bread is ready)
6.  Eat and enjoy!

Happy Thanksgiving from Sweden!! ;)

Thanksgiving came and went and left a mark in my heart...  I've never experienced Thanksgiving until I moved to Sweden.  My first thanksgiving was last year, which I thought was quite a lovely experience.

This year, I had my thanksgiving which was hosted by a Chinese Swede and attended by people from the States, Canada, French, Australia, Korea, New Zealand and of course Sweden.  You can't get anymore diverse than this!!  I just love multiculturalism!

Everyone brought some form of dish while the hostess roast her a massive turkey which was so moist and tender!  I even managed to takeaway the carcass home.. SCORE!  *blush*  I'm so bloody asian aren't I? ;)  She also made the stuffing from liver, bread, nuts and all sort of other ingredients and truth be told, I've never enjoyed stuffing this much!  The stuffings were made and roasted in the oven, not inside the bird.. which is good as I hate those wet and soggy stuffings.. *shudders*  Bring me back to my childhood where I was forced to eat stuffings from chickens even when I did not want to.  What's with evil Asian parents who kept saying it's a wastage to throw away food.  I guess I was their dustbin =P

There's potato mash and bread sauce (WTF is bread sauce anyhow?  I've never heard of it, apparently it's British?  I've never had that while leaving in London hehe.  But it's quite interesting and it's thick with the texture of mash potato).  Lots of people brought side dish such as green beans, carrots (whoever brought the carrots was a bit of a tightass, I am sorry to say.  Zero effort and probably just enough to feed 5 mouthful.  Ok.. Enough cattiness for today ;)).. There's even wine and some delicious desserts!

I am extremely thankful for the lovely friends I've made which made life here in this cold dark country bearable and of course my gorgeous, albeit grumpy other half of nearly 1 year!  Cheeeers!

Top cornbread accidentally baked with polenta and bottom with maize flour ;P  They both taste yummy!
Yep!  I'm all ready to rock about town, courtesy of hubby..  ;P
2 different loaves of cornbread

Cornbread made by moi!

The turkey was enormous..  The picture looks small.. but so moist and juicy!

That's me, enjoying my turkey leg!

There's even a makeup class happening in the corner ;)

Lovely chocolate cake and pumpkin pie!

My.. What do we have here? ;)
Ding Dong!!  Kinda reminds me of Wizard of Oz.. hehe.. in this case, the hostess lies there with exhaustion!
Picture stolen from the hostess!  Group view of everyone! =)

Until next time!

Yay! Fika time! This time it's cinnamon rolls with vanilla glaze! ;)

This week has been... well... uneventful for me.  2 days in a row, I've been wandering around the apartment in my PJs.. I hate not working, it drives me crazy.  I'm so glad I've found a few expats girlfriends or to be honest, I would have gone from being moody to crazily insane!  Is that why S loves working overseas?  To get away from that moping, moody bitch at home.. Whoops!

Anyhow, in keeping with the favourite past time of the Swedes, I love having fikas.  It's a great way to meet new and old friends between sweet and savoury nibbles and copious amount of tea and coffee.  It also gives me a chance to actually experiment with recipes I find interesting.

This time around, I decided to try my hands on some cinnamon rolls as I bought a couple pack of yeast and as I've never used yeast before, I thought this will be a great time for me to experiment!

Living in Sweden, cinnamon rolls are a part of life here.. I see them and smell them everywhere.. especially late at night coming out from the t-bana, you'll smell freshly baked cinnamon rolls.. It really makes my mouth water!

Voila!!!

Funnily enough I remembered to take some pictures (half way) while making them!..  Be impressed with my one hand picture taking ;)

Anyhow, here it is, although it's not very sweet.  Depending on how you like your rolls, either add more sugar or less... but I try not to have my stuff too overly sweet:

Ingredients:

Cinnamon Rolls

*  4.5 cups of all purpose flour (plus 1/2 cup extra)
*  2 cups of milk
*  100g of butter (non salted)
*  1/2 cup of sugar
*  1 packet of dry yeast
*  1 tsp of baking powder (heaping)
*  1 tsp of baking soda (barely full)
*  1 tsp of salt
*  50g of melted butter
*  1/2 cup of sugar
*  Loads of cinnamon

Vanilla Glaze

*  1.5 cups of icing sugar, sifted
*  1/2 tsp of salt
*  3 TSP of butter, melted
*  3 TSP of milk
*  1 tsp of vanilla extract

Sprinkling a packet of yeast into the sugar, butter and milk mixture which I've heated on medium heat and moved away (before the boiling stage) to sit in a corner to cool to warm temperature..  Let the yeast work its magic for around 1 minute

Add 4.5 cups of flour and stir mixture together.  Cover up with a clean kitchen cloth and let sit in a relatively warm corner for 1 hour

(L) This is bakpulver which is baking powder, and (R) bikarbonat which is baking soda.  They are not the same thing and you'll need these in your list of ingredients =)

After 1 hour, Voila!!  It's like magic!!  Rise rise rise!!!

Then add 1/2 cup of flour, 1 heaping tsp of baking powder and barely 1 tsp of baking soda

Mix them together!  Then, you'll need to cover the dough and put into the fridge until you need it.  (up to 3 days)

I transferred mine into a mixing bowl, covered it and left it in the fridge till the next day

The next morning...

Sprinkle your kitchen top with lots of flour and then grab half of your dough and shaped it in a rectangle shape with your fingers.  Then use your rolling pin and roll the dough as thinly as you can

Sprinkle generously with melted butter.  Pour it all over the dough and with your fingers, spread the butter so it covers the whole surface

Sprinkle sugar on top all over

Then, sprinkle the cinnamon generously over the spread.  Notice how my dough is in a nice rectangle shape?  Well, I cheated, I cut the excess with a knife and put it back with the rest of the dough mixture ;)

Roll it tightly from top to bottom

Pinch the ends together, so it wouldn't spread open when you cut it!

Then start cutting them.. I cut mine about 2cm wide.  Look how dirty my bench top is!

My 1st batch..  They look soo tiny!  Unfortunately I didn't have any bigger foiled pans and had to use such a small little one =(

My 2nd batch.. With the remainder of dough, do the same as before..  This batch is a lot wider, height wise, thankfully!

Roll them.. Yum!  Definitely a lot fatter =)  Yay!

2nd batch is a lot fatter in appearance..  Cover with kitchen cloth and let sit for about 1/2 hour

Meanwhile, switch on your oven and set it to 175 degrees celsius in temperature...

Put them in the oven for 18 - 20 mins.  You want them nice and brown but not too burnt

Meanwhile, make the vanilla glaze by sifting the icing sugar and salt.  In another bowl, whisk the butter, milk and vanilla essence and stir into sugar until mixture is smooth.  Adjust to the consistency you want...  if it's too thick, add more milk or if it's too runny, add more icing sugar

Voila!!  Out of the oven!  They have risen beaaaaautifooooooolly!  The heavenly smell in the apartment is soooooooooo comforting!  The one at the top right was waaay too packed but unfortunately I've run out of foiled pans =(  Next time I'll have perhaps 5 rolls in each.

Can't resist a closer look..  Oh be still my beating heart!

Drizzle the glaze on top.. generously!  All over the cracks!

Bring them to the fika and enjoy!

Instructions:

1.  In a medium sized saucepan and on medium heat, heat up 2 cups of milk, 100g of butter and the 1/2 cup of sugar until before it boils.  Remove from heat and let sit until it cools down to warm temperature.

2.  Sprinkle a packet of yeast and let sit for 1 minute.

3.  Add 4.5 cups of flour and stir mixture together.  Cover with a clean kitchen towel and let sit for 1 hour in a relatively warm area.

4.  After 1 hour, your mixture would have risen.  Remove kitchen cloth and add in 1/2 cup of flour, 1 heaping tsp of baking powder and less than 1 tsp of baking soda.  Mix them, cover up and leave in the fridge until you need it.  You could leave it in the fridge for a maximum 3 days.  Make sure you leave it in the fridge for at least an hour before using as it's a lot easier to handle when it's cold

5.  Set oven to 175 degrees Celsius.  Take half the dough mixture and spread onto your kitchen bench.  Knead with your fingers and shape it into a rectangle.  Roll up and down with your rolling pin until dough is quite thin.  Dough should spread width and length wise as you roll

6.  Pour butter generously over the dough and rub butter all over, so every inch is covered.

7.  Sprinkle sugar all over.  Use more if needed.

8.  Sprinkle cinnamon generously all over

9.  Roll dough from farthest from you.  Using your fingers, roll it slowly and tightly towards you.  Pinch end together and flip it so the end is faced down.

10.  Cut roll about 2cm wide.  I got about 37 little rolls. Make sure you use a cutting  board underneath so you don't accidentally cut your bench top!

11.  Rub butter into disposable foiled pans.  Place rolls into pans, careful not to overcrowd as they will expand.. (as I found out!)

12.  Repeat step 5 - 11 with the rest of your dough mixture.

13.  Put into oven for 18 - 20 minutes.  Make sure it's nice and brown but make sure it it not too overly brown.

14.  Meanwhile, make the vanilla glaze by sifting the icing sugar and salt.  In another bowl, whisk the butter, milk and vanilla essence and stir into the sugar mixture.  Mix until it forms a smooth paste.  Adjust consistency if you need.  If it's too runny, add more sugar or if it's too thick, add more milk.  Leave at room temperature.  Before using, whisk again to get a smooth consistency.

15.  Once rolls are done, remove from oven and straightaway, pour glaze all over the rolls, through cracks and what not.  The rolls will soak it all the moisture and flavour.

16.  Enjoy!!!

They are lovely to eat when still warm, so make sure you warm it up before eating!  I took a box to my friend's place for fika, gave a box away and freeze the 3rd box for when I have my next fika.. Hopefully in a few weeks ;)

Until next time!!
